6 pieces chicken
tablespoon salt
1/4 cup olive oil
2 chopped cloves of garlic
3 tablspoons of parsley
one lb. spaghetti
Pecorino Romano Cheese
Brown chicken pieces in fat cut from chicken and olive oil in large frying pan.
Add:
minced cloves of garlic
2 tbs. of parsley
2 cups of water and or wine
Tablespoon of salt
Cook over medium heat for at least 1/2 hour until chicken is tender. Add more water if necessary. Serve over spaghetti with fresh Pecorino Romano Cheese.
Broccoli and Cauliflower with Ziti or Gnocchi
1 lb of ziti or gnocchi
quarter cup of olive oil
1 teaspoon of red pepper flakes
2 minced cloves of garlic
Pecorino Romano Cheese
Boil Ziti or Gnocchi with bite sized pieces of cauliflower and broccoli according to the pasta directions
heat olive oil with chopped garlic with red pepper flakes, do not let garlic brown
drain pasta and broccoli and cauliflower reserving about one cup of pasta water
